For the Dressing:
3 tbsp olive oil
1 ยฝ tbsp red wine vinegar or lemon juice
1 tsp Dijon mustard
1 tsp honey or sugar substitute (like stevia or monk fruit)
ยผ tsp garlic powder
Salt and black pepper to taste

Cook the pasta:
Bring a large pot of water to a gentle boil. Cook pasta according to package directions until al dente. Drain and rinse under cool water to stop the cooking.Prepare the veggies:
