Instructions:
Prepare the salmon: Preheat your oven to 375°F (190°C). Rub the salmon fillets with olive oil and season with salt, pepper, lemon juice, and dried oregano (or thyme). Place the salmon on a baking sheet and bake for about 12-15 minutes, or until the fish flakes easily with a fork.
Prepare the salad: While the salmon is baking, toss the mixed greens, avocado slices, walnuts, cherry tomatoes, and red onion in a large bowl.
Make the dressing: In a small bowl, whisk together balsamic vinegar and Dijon mustard (if using). Drizzle the dressing over the salad and toss gently.
