Heart Dinner

Heart-Healthy Salmon Salad with Avocado and Walnuts for Valentine’s Day? It’s packed with omega-3 fatty acids, antioxidants, and fiber—all great for heart health!

Ingredients:

  • 2 salmon fillets (about 4 oz each)

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 1 tablespoon lemon juice

  • 1 teaspoon dried oregano or thyme

  • 1 ripe avocado, sliced

  • 2 cups mixed greens (such as spinach, arugula, or kale)

  • 1/4 cup walnuts, chopped

  • 1/4 cup cherry tomatoes, halved

  • 1/4 red onion, thinly sliced

  • 1 tablespoon balsamic vinegar (for dressing)

  • 1 teaspoon Dijon mustard (optional, for extra flavor)

Instructions:

  1. Prepare the salmon: Preheat your oven to 375°F (190°C). Rub the salmon fillets with olive oil and season with salt, pepper, lemon juice, and dried oregano (or thyme). Place the salmon on a baking sheet and bake for about 12-15 minutes, or until the fish flakes easily with a fork.

  2. Prepare the salad: While the salmon is baking, toss the mixed greens, avocado slices, walnuts, cherry tomatoes, and red onion in a large bowl.

  3. Make the dressing: In a small bowl, whisk together balsamic vinegar and Dijon mustard (if using). Drizzle the dressing over the salad and toss gently.

  4. Assemble the dish: Once the salmon is done, flake it into large pieces and place it on top of the salad.

  5. Serve: Garnish with extra walnuts and a squeeze of lemon, if desired. Serve immediately for a heart-healthy, romantic meal!

Why it’s heart-healthy:

  • Salmon is rich in omega-3 fatty acids, which help lower cholesterol and reduce the risk of heart disease.

  • Avocado provides healthy monounsaturated fats that support heart health.

  • Walnuts are packed with antioxidants and omega-3 fatty acids that contribute to cardiovascular health.

This dish is perfect for a romantic, heart-healthy Valentine's Day dinner!
